A stainless jacketed steam kettle is a kettle that uses steam to heat food and other products. It has a steam jacket around the kettle’s bowl that’s filled with pressurized steam. The steam condenses on the jacket’s surface, transferring heat to the product through conduction. The condensed steam is then removed from the jacket to allow more steam to enter and continue the heating process. Steam jacketed kettles can operate at temperatures of up to 300°F, which is much higher than non-jacketed kettles or pressure-less models that can only reach 212°F. The even distribution of heat throughout the kettle’s cooking surface results in consistently cooked foods, which is especially useful for delicate foods that can be easily damaged by mixing or stirring.
