A brewery is really two plants sharing a building. On one side, production — milling, mashing, boiling, fermenting, conditioning. On the other, packaging — filling, seaming or capping, labeling, casing. They run on different equipment, different timelines, and different failure modes, and they’re usually bought at different points in a brewery’s life.
This guide covers the production side: the brewhouse, the cellar, and the support systems that keep both running. It’s the equipment that determines what you can brew and how much, before a single container gets filled.

The brewhouse is defined by its vessel count, and that configuration sets both your capability and your daily turn rate.
Two-vessel systems combine mash and lauter in one vessel and boil and whirlpool in the other. Compact, economical, and the most common configuration in smaller craft operations. The limitation is turns per day — you can’t start the next mash until the first vessel clears.
Three-vessel systems separate the lauter tun, freeing the mash vessel earlier and enabling more brews per day. This is the practical step up for a brewery outgrowing its two-vessel capacity.
Four-vessel systems add a dedicated whirlpool, further decoupling the sequence and supporting the highest daily throughput. These appear in regional-scale operations.
Heating method is a major compatibility question. Direct-fired systems are self-contained but offer less precise control and carry scorching risk on high-gravity worts. Steam-jacketed systems provide even, controllable heat but require boiler capacity — which is a facility decision, not just an equipment one. Electric systems suit smaller operations without steam infrastructure.
When evaluating a used brewhouse, confirm the heating method matches what your building can actually supply. A steam brewhouse without a boiler is an expensive problem.
Mills come as roller mills in two-, four-, and six-roll configurations, with crush consistency improving as roll count rises. Beyond the mill itself, consider how grain reaches it and how grist reaches the mash — auger, grist case, or pneumatic conveyance — and how spent grain leaves.
Grain handling is the part of a brewery expansion most often underplanned. Manual bag handling that works at small scale becomes a labor problem quickly.
Fermenters are where most breweries feel capacity pressure first, and they’re the most commonly purchased used vessel.
Unitanks and conical fermenters dominate. Key specifications: working volume versus total volume, cone angle, jacket coverage and configuration, pressure rating, manway type and position, and whether the tank includes a carbonation stone, sample valve, and racking arm.
Pressure rating deserves particular attention. Tanks rated for pressure allow spunding, closed transfers, and carbonation in the fermenter. Unrated or atmospheric tanks limit your process options. Confirm rating documentation, not just a claim.
Jacket condition is the single most important inspection item on any used tank. Glycol jackets can develop leaks that are invisible externally and expensive to repair. Ask whether the jacket has been pressure tested, and if not, plan to test before commissioning.
Tank ratio and cellar planning. A common approach is sizing fermentation capacity as a multiple of brewhouse batch size, with enough tanks to cover your longest fermentation and conditioning cycle plus turnaround. Buying fermenters one at a time as demand grows is normal, and it’s a major reason used tanks move so steadily.
Brite tanks hold finished beer under pressure for carbonation, clarification, and packaging supply. Specifications parallel fermenters — pressure rating, jacket coverage, fittings — with the addition of how the tank interfaces with your packaging equipment.
That interface matters more than people expect. Brite tank pressure, height, and outlet configuration all affect how beer reaches a canning or bottling filler, and mismatches show up as foaming and dissolved oxygen pickup at the filler rather than as tank problems.
Glycol capacity is the constraint that quietly limits brewery growth. Adding fermenters without adding chiller capacity means nothing holds temperature during peak demand — typically when several tanks are in active fermentation at once.
When evaluating used glycol chillers, consider total cooling capacity against your connected tank load with headroom, reservoir volume, pump capacity and the head your longest runs require, and ambient conditions where the unit will sit. Texas summer heat load is not Pacific Northwest heat load, and chillers sized for one may struggle in the other.
Heat exchangers — typically plate style for wort chilling — should be evaluated on plate condition, gasket state, and capacity against your knockout rate.
Pumps. Centrifugal pumps for most transfers, with attention to sanitary construction and seal condition. Confirm what’s included with a used system and what isn’t.
Valves and fittings. Butterfly valves, sanitary clamps, and gaskets are consumables. Budget to replace gaskets throughout on any used system.
CIP. Whether a dedicated CIP cart or an integrated system, cleaning capability should scale with vessel count. Manual cleaning that works with four tanks becomes untenable at twelve.
Keg washing and filling for draft-focused operations, which many craft breweries remain.
Brewery equipment purchases follow a predictable pattern, and knowing where you sit helps.
Small operations typically buy a complete turnkey brewhouse plus a starting tank set. Growing breweries add fermenters incrementally against the existing brewhouse until vessel turns become the constraint. Breweries hitting that ceiling face the larger decision: a bigger brewhouse, more turns per day through added vessels, or a second location.
The used market serves the middle stage exceptionally well. Tanks are the most liquid category in used brewing equipment, and matching additional fermenters to an existing brewhouse batch size is a straightforward purchase.
Stainless grade and finish. Confirm 304 or 316 as appropriate, and inspect interior finish quality. Rough or damaged interior surfaces harbor soil and resist cleaning.
Pitting and corrosion. Look carefully around welds, fittings, and anywhere caustic or acid sits during cleaning. Chloride pitting is a genuine risk in tanks that saw improper sanitizer use.
Weld quality. Sanitary welds should be smooth and continuous. Rough or discolored welds are a red flag.
Jacket integrity. Pressure test. This is worth repeating because it’s the most consequential hidden defect in used tanks.
Manways, gaskets, and fittings. Replaceable, but confirm sizes match your existing hardware so you’re not adapting everything.
Documentation. Pressure vessel certification, prior service history, and what product the vessel held previously.
The brewhouse and cellar exist to feed the packaging line, and the handoff is where brewery projects most often reveal gaps. Brite tank capacity has to support a full packaging run without starving the filler. Counter-pressure filling requires beer at the right temperature and carbonation. And shelf-stability decisions on the production side determine whether the packaging line needs tunnel pasteurization.
Planning both sides together — even when buying them years apart — avoids the most expensive surprises.
Brewing equipment reaches the used market constantly. Breweries expand, consolidate, change formats, or close, and stainless vessels built for decades of service become available with most of that life remaining. Buying used delivers full production capability at a fraction of new cost, and financing is available.
