Kettles, Tanks, and Mixers: What Is the Difference?

The terms are often used interchangeably, but each describes a vessel built for a slightly different job.

Kettles

A kettle is a vessel designed primarily for heating, and often cooling, product as it is mixed. Most processing kettles are jacketed, meaning an outer shell surrounds the product chamber and circulates steam, hot water, thermal oil, or chilled glycol. Kettles are common for cooking sauces, soups, fillings, confections, and syrups, as well as for melting waxes and heating cosmetic bases.

Mix Tanks

A mix tank is a vessel built primarily for blending. It may be single-wall for ambient mixing or jacketed when temperature control is needed. Mix tanks are used for batching beverages, dissolving powders, blending chemicals, and preparing cleaning products.

Holding and Surge Tanks

Holding tanks store finished or in-process product before filling. Many include gentle agitation to keep ingredients suspended. A surge or balance tank feeds a filler at a consistent rate, helping keep the packaging line running smoothly.

Mixers

A mixer can be a standalone unit, such as a portable or clamp-on agitator, or an integrated system mounted to a vessel. The term also covers specialized machines like high-shear mixers, inline mixers, and ribbon or paddle mixers for thicker materials and dry blends.

Propeller and Turbine Agitators

Anchor and Scraped-Surface Agitators

Counter-Rotating Agitators

Counter-rotating systems pair a scraping anchor with an inner agitator turning in the opposite direction. The result is thorough top-to-bottom mixing for viscous products such as nut butters, heavy sauces, lotions, and ointments.

High-Shear Mixers

High-shear mixers use a rotor and stator to break down particles and droplets. They are used for emulsions, dispersing gums and powders, and producing smooth creams, dressings, and pharmaceutical suspensions. High-shear heads may be mounted in the vessel, placed on the bottom of the tank, or installed inline.

Ribbon and Paddle Mixers

For dry powders, granules, and pastes, ribbon and paddle mixers move material through a horizontal trough. Nutritional, spice, and chemical producers often use them for dry blending before liquid processing or packaging.

Vacuum Mixing Systems

Some products cannot tolerate trapped air. Vacuum-rated vessels remove air during mixing, which helps cosmetics, pharmaceutical creams, and certain food products achieve a consistent, bubble-free finish.

Steam Jacketed Vessels

Steam jackets heat quickly and evenly and are common in food and beverage plants that already have a boiler. Confirm the jacket’s rating and whether your steam supply is compatible.

Hot Water and Thermal Oil Jackets

Hot water provides gentler heating for delicate products, while thermal oil can reach higher temperatures without high steam pressure.

Dimple and Half-Pipe Jackets

Jacket construction affects heat transfer and pressure capability. Dimple jackets are common on lighter-duty vessels, while half-pipe coils are often found on heavier-duty processing equipment.

Cooling Capability

Many jacketed kettles can also cool product by running chilled water or glycol through the same jacket. Rapid cooling after cooking improves food safety and moves batches to filling faster.

Food producers use jacketed kettles for sauces, salsas, soups, gravies, jams, and candy. Scraped-surface and counter-rotating agitators are especially common.

Pharmaceutical and Nutritional

Pharmaceutical and nutritional manufacturers need vessels with polished interiors, sanitary fittings, and thorough documentation. Vacuum and high-shear systems are frequent choices for creams, gels, and liquid supplements.

Lotions, shampoos, and liquid soaps depend on emulsifying and heating equipment. Household cleaners often use simpler ambient mix tanks with propeller or turbine agitation.

Chemical

Chemical blending may call for vessels with specific materials of construction, gaskets, or seals compatible with the product. Always verify chemical compatibility before purchase.

What to Inspect When Buying a Used Kettle, Tank, or Mixer

Material and Surface Finish

Identify the stainless steel grade and interior finish. Food, dairy, and pharmaceutical applications often require polished surfaces that resist buildup and clean thoroughly. Look for pitting, scratches, and corrosion.

Welds and Jacket Integrity

Inspect interior and exterior welds for cracks or discoloration. Ask whether the jacket has been pressure tested and review available documentation. Confirm any pressure or vacuum rating against the vessel’s nameplate and records.

Agitator Drive and Seals

Check the motor, gearbox, shaft, bearings, and seals. Scraper blades and wear parts should be in serviceable condition or readily replaceable.

Sanitary Design and CIP

Look for sanitary valves, fittings, and outlets. Spray balls or clean-in-place connections make cleaning easier and more consistent.

Size and Fit

Confirm the working capacity against your batch size, and measure your available floor space, ceiling height, and doorways. Consider access for loading ingredients and discharging product.

Controls and Utilities

Review the control panel, temperature sensors, and electrical requirements. Make sure your plant’s power, steam, and water supply can support the vessel.
